Yogurt shake/Lassi

Do you have sweet tooth like me? Do you have to reach out for something sweet every now and then?  Or is it the hot summer afternoon which has baked you to the bones and you need something cool and refreshing. Or you need some quick fix for your kids hunger pangs in between the meals. Whatever may be your reason, this mouth watering sweet yogurt shake will not let you down. And it literally takes 2 minutes to make it.

All you need is sour yogurt, some sugar and water. Doesn't it already sound simple? It is. And I will tell you my own very special twist to it at the end so keep reading.

So lets start. First of all it does not matter if the yogurt is sour but it is my preference since the sourness gives the shake a vibrant taste and that is how I like it. But if you are some who cannot stand sour taste at all, then can simply switch to fresh yogurt. Next I recommend that you use powdered sugar or baking sugar as the normal grainy sugar wont dissolve easily in the cold yogurt shake.

Once you Put the sour yogurt, sugar and water in a blender and blend away till you get a smooth texture something similar to the texture of fruit smoothies. The key to getting this consistency is the amount of water to be used. So once you start making the shake, use only little bit water and then gradually increase the water content until you get the desired consistency. If you are using ordinary grainy sugar check the shake for any undissolved sugar left in the shake before you pour it for serving. If not, then just blend again for few more minutes.

Now here come my special twist to it. The trick is add just few drops of vanilla essence to the rest of the ingredients before blending. Don't forget to add fresh cream on top if you are serving it to children. Kids usually love it.

when the yogurt shake is ready, pour into the serving glasses or into fancy kullad (earthen put) just like in the image below and impress people with some saffron garnishing on top.
